Spring Has Arrived
This week Canadians celebrated the official beginning of Spring. Again I have tried to capture the magic of canadian weather, so here you are viewing a Spring sunrise. For some reason the season of Spring began on the 21st March, and not the start of the month. Haven't been able to find a logical reason for this, will need to research a little more. The warm weather we have exprienced this week was celebrated by Candians all around by washing their cars, removing the covers from the outside furniture and standing in the driveway drinking a beer. I must agree though, that there has been a definite change in the weather. Proof of this is found in the presence of new buds on the branches of trees and shrubs, plus the sprouting of tulip and daffodil bulbs. P.S. Chocolate Crackles
Another culinary success!! What is one of the easiest aussie recipes again turned into a treasure hunt. The finding of what we know as 'copha' ended in a one day supermarket hunt for the key ingredient. This time I was required to enquire at four supermarkets, and research the internet for something of the equivilant in Canada. As it turned out, they do stock coconut oil at Loblaws, but in jars. So all is well. For those wanting an easy and quick treat I have included the recipe below.
CHOCOLATE CRACKLES
Four cups Rice Crispies
1 1/2 cups Icing Sugar
1 cup Coconut
3 Tbs Cocoa
250g Coconut Oil
Mix together dry ingredients. Melt Coconut Oil. Blend oil with dry ingredients. Spoon mixture into patty cake wrappers, then refrigerate until set. Voila!!
